Meal Prep: Asian Inspired Shrimp!

Hello Beautiful People,

I’m so excited to share this meal prep day with you. I’m a seafood girl so today’s recipe is an Asian Inspired Shrimp with Green Beans and Jasmine Rice, but for all my chicken lovers, guess what I did chicken too! Yes you get two meals using the same ingredients. Because I love you guys and needed to give you a little something more because you waited on me for so long to get some of my favorite meals to you, I added a bonus meal!!! Yes, Seasoned Baked Chicken Breast with Roasted Broccoli and Zucchini.

Meal Prepping for me has become one of the days I look forward to every week because it sets me up for success. When I meal prep, I’m able to stay focused on my health goals because I always know that I have healthy food options available and ready to go. Meal prepping doesn’t have to be a long drawn out day of cooking. I like to get multiple meals done at once, using different or the same flavor profiles and also doing something easy, like rice in the rice cooker or roasted veggies.

Asian Inspired Shrimp with Green Beans

Prep: 25 Mins

Cook: 20 Minutes

Total: 45 Minutes

Yield: 4-6 Servings

Ingredients:

Marinade

4 tablespoons Braggs Amino or Soy Sauce

1/4 c. Honey

1 tablespoon Pure Sesame Oil

1/4 cup Sriracha

1 tablespoon Minced fresh garlic

1 tablespoon minced fresh ginger

1 1/2 tablespoon chopped Cilantro

1 1/2 tablespoon chopped green onions

1/4 cup chopped red bell pepper

3 Boneless Skinless Chicken Breasts, cleaned

1 lb of medium shrimp, cleaned and deveined

Green Beans

2 lbs Fresh Green beans, cleaned

1 1/2 tablespoon minced fresh ginger

1 1/2 tablespoon minced ginger

Extra Virgin olive oil spray

Salt and Pepper to taste

Directions:

Step 1

Combine Soy sauce (Bragg’s Aminos), Honey, Sriracha, sesame oil in bowl, stir to mix. Add the ginger, garlic, cilantro and bell pepper, mix well. Set aside.

Clean the shrimp, place in a ziplock bag, set aside

Clean and prep chicken breast, place in a ziplock bag, set aside

Pour half of the marinade over chicken and the other half over the shrimp. Place in the fridge and allow to sit for 30 minutes.

Step 2

Pre-heat oven to 350 degrees. In a medium casserole dish, spray with olive oil, add chicken breast and marinade to dish. Place in oven and cook for 25-30 minutes, until chicken is cooked through.

Meanwhile, Place a medium pan over medium heat. Spray with olive oil. Add the shrimp and marinade. Sauté until shrimp is cooked through about 7-10 minutes. Remove shrimp, cook marinade for an additional 5 minutes until thickened. Add shrimp back to pan and toss to coat.

Step 3

In a medium Sauce pan, place over medium heat, add olive oil spray. Add green beans and cook for 5-7 minutes. Add ginger and garlic to pan and toss with green beans. If needed, add tablespoon of water to ensure that green beans are tender crisp. Season with salt and pepper.

In a meal prep container, add (1) cup of rice optional, 6-8 shrimp, and green beans. For the chicken, add (1) cup of rice optional, sliced chicken breast and green beans. Allow to cool and place in the fridge.
